Beef & Pork Burgers Anyone?

Strawberry Time

Hi everyone. Today I want to share another recipe of mine with you. You can name it Ichigo (Japanese), Talgi (Korean) or even Strawberry but this tiny red berry really does provide some goodness to us. Did you know Strawberries contain high dietary fiber, Vitamin C, Manganese, Folate and Potassium too. With all these goodness, how can we not love Strawberries.

Usually how would you eat your strawberries? As for me, I like adding in some whip cream and organic honey on top to enjoy the full freshness of it. Sometimes, I would love to mixed into my green salad to make it more vibrant and add taste to it. But the main recipe I would like to share with you is, Strawberries Cream with Eclairs. There are just prefect for this summer season and the upcoming Mother’s Day too. You may purchase ready made Eclairs in supermarket but if you wish to make yourself for greater satisfaction, you may follow the recipe provided.

Ingredients For Eclair: –

1/4 cup of whole milk, 1/4 cup of water, 1/2 stick unsalted butter, 1/2 teaspoon salt, 1/2 cup all purpose flour, 2 large eggs

Ingredients for Cream : –

1 cup heavy cream, 1 vanilla bean, 2 tablespoon confectioner sugar

Ingredients for Strawberries : –

2 cups of fresh strawberries (chopped into small pieces), 1 tablespoon sugar, 1 teaspoon of mint

Cooking Method : –

1.Bring milk, water and butter and salt to boil in a saucepan on medium heat. Once melted, add in flour and continue to stir until mixture is well mixed. Transfer to a bowl and set aside.

2.On a medium speed mixer beat eggs (add in 1 at a time). Finally, add in the mixture into the eggs until well blend.

3. Transfer the dough into a pastry bag with a round tip.

4. Pipe about 2 1/2 inch long of Eclairs onto the baking sheet.

5. Bake the Eclairs for about 20 – 25 minutes until they are golden brown in a preheated oven of 400 degrees. Transfer to wire rack to cool off.

6. Split Eclairs into half and pipe in the cream ingredients. Add  in the strawberries and sandwich the Eclairs tops. And you are ready to served these tiny and cute Eclairs for your friends and family.

Doughnuts Doughnuts!

Hi everyone. Good morning it another day, another way to kick start your day. How about with some DOUGHNUTS? Recently I have tried to make my own doughnuts for the up coming charity event. So I just wanted to share this recipe of mine with you. I know there are lots of doughnuts provider out there such as, Big Apple, Dunkin Donuts, Krispy Kreme Doughnuts, Mister Donut just to name a few. But by making your own doughnuts, priceless. Not only that, it’s great with parties, children’s day and even for charity.

Ingredients A:-

800g high protein flour, 200g superfine flour, 20g instant yeast

Ingredients B:- 

150g castor sugar. 12g salt, 40g milk powder, 20g baking powder, 2 eggs, 450ml water

Ingredient C:-

120g butter (room temperature)

Topping:- 

500g cooking chocolate, 100g almond nibbles

Cooking Method:- 

1. Mixed ingredients (A) and (B) until clings together. Add in (C) and continue to kneading until smooth and elastic.

2. Covered the dough in a warm place for 40 minutes until the size is double up.

3. Divide the dough into 4 smaller portion. Roll them into smaller doughs.

4. Rest for 10 minutes.

5. Pat the dough flat on the floured surface. Roll out into 1″ thickness and cut the doughnut using it’s mould. Leave for another 40 minutes for the last proofing.

6. Deep fried the doughnuts until golden brown. Deep fried temperature should be around 170 – 180 Celsius. If oil is too hot, the inter part will not cook while if the oil is too low, the doughnuts will be very oily.

7. Double boil some chocolate in a bowl and dip the surface of the doughnuts. Sprinkle some almond nibs on top for decoration.
